Project Title: Impact of high-carbohydrate and high-fat diets in combination with nitrate on oxygen uptake kinetics and exercise performance

Supervisors: Professor Andrew Jones and Dr Anni Vanhatalo

Project Description:
We know that dietary nitrate, which is found in beetroot juice, can improve exercise performance in some people by making their muscles more efficient. We also know that muscle efficiency can be affected by the amount of fat or carbohydrate (such as sugar) in the diet. We therefore want to found out whether the effects of nitrate on exercise performance can be increased or decreased when combined with a high-fat or high-carbohydrate diet. We will ask healthy, young men to volunteer for this study. We will take blood samples from a vein in the participant’s arm and small muscle samples from their thigh. We will measure the amount of oxygen they use during a cycling performance test to assess their efficiency. The results will help us understand how diet may impact high intensity exercise performance.
